This spanish appetizer is something different. Especially on hot days it is a treat!

Time to prepare: 25 min. Cool off: 2 hours.
Cut the bread in pieces and absorb them in vinegar and some spoons of cold water. Cross the tomatoes on the bottom and hold them under boiling water. Take off the skin, slice the tomatoes in halves and remove the seeds. Clean the red pepper and the cucumber. Cut them into pieces. Take off the skin of the onion and garlic, and cut them into little pieces. Put all of this in the food processor together with the drained bread, the tomatoes, the olive oil and some salt and pepper. Make a smooth soup.
Cool off the soup in 2 hours in the fridge. Taste whether you need some more salt and pepper. Serve the soup in the bowls with some soft cream cheese and some basil.
